Description
- 2 Russet potatoes, scrubbed, skin left on
- Olive oil
- Coarse 2ea salt

- Preheat oven to 400.
- Use a knife to pierce the potatoes.
- Generously rub each potato with olive oil and add a generous sprinkling of sea salt to the top of each.
- Place each potato directly onto the middle rack and bake for 45-60 minutes or until the poatoe is cooked through.
- Remove the potatoes from the oven, cut a cross into the top of the potato from end to end and side to side.
- Place two fingers on each side of the cut on the end of the potato and push towards the center opening the potato up, or, alternatively, slice the potatoes from end to end.
- Serve with butter and any other condiments desired such as sour cream, bacon bits, and chives.
