Apple and Walnut Stuffed Pork Tenderloin

Ingredients

  • Pork tenderloin
  • 1 cup bread cubes
  • 1 stalk celery, finely diced
  • 1 large apple, finely diced
  • 1 small onion, grated
  • 2 tsp Badass Burger Booster
  • 1 tsp fresh rosemary, chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup chopped walnuts
  • 1/2 cup chicken broth

 


Instructions

  1. Preheat oven to 350
  2. Remove silver skin from the tenderloin
  3. Position the pork tenderloin horizontally in front of you. Make a lengthwise cut halfway through from tip to tip. Now, rotate the tenderloin vertically, and on each side, make a cut about ¾ of the way through. Open it up like a book.
  4. Place a piece of saran over the tenderloin and pound it flat being careful not to create any holes.
  5. Set aside.
  6. Place the bread cubes into a large bowl, add the celery, apple, onion, seasonings, walnuts and broth, mix well.
  7. Cover the tenderloin with the stuffing, making a thin equal layer.
  8. Roll and tie with butcher’s twine.
  9. Place on a parchment lined baking sheet and bake for 30-40 minutes.
