- Pork tenderloin
- 1 cup bread cubes
- 1 stalk celery, finely diced
- 1 large apple, finely diced
- 1 small onion, grated
- 2 tsp Badass Burger Booster
- 1 tsp fresh rosemary, chopped
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup chopped walnuts
- 1/2 cup chicken broth
Instructions
- Preheat oven to 350
- Remove silver skin from the tenderloin
- Position the pork tenderloin horizontally in front of you. Make a lengthwise cut halfway through from tip to tip. Now, rotate the tenderloin vertically, and on each side, make a cut about ¾ of the way through. Open it up like a book.
- Place a piece of saran over the tenderloin and pound it flat being careful not to create any holes.
- Set aside.
- Place the bread cubes into a large bowl, add the celery, apple, onion, seasonings, walnuts and broth, mix well.
- Cover the tenderloin with the stuffing, making a thin equal layer.
- Roll and tie with butcher’s twine.
- Place on a parchment lined baking sheet and bake for 30-40 minutes.
