- 1 box rigatoni or pasta of choice, cooked
- 2 tbsp olive oil
- 1/4 cup finely diced bacon lardon
- 1/4 cup diced shallots
- 2 large apples, chopped
- 3 lg mushrooms, diced
- 1 green onion, chopped
- 8 ounces lobster meat
- 1/2 tsp mustard
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tbsp chopped basil
- 1/2 oz Calvados liqueur
- 1/4 cup white wine
- 8 oz asiago cheese, cubed
- 2 cups heavy cream
Instructions
- Heat the olive oil in a large saute pan.
- Saute the bacon lardon until it just begins to crisp.
- Add the shallots and cook until translucent.
- Add the apples, mushrooms and lobster meat and cook for 3-4 minutes.
- Stir in the mustard, salt, pepper, and basil, mix well.
- Deglaze the pan with the Calvados and white wine.
- Add the heavy cream, heat through, add the cheese and cook until it begins to melt.
- Lastly stir in the pasta and heat through.
