Wild Blueberry Buckle

So, what in the world is a buckle? A buckle is a very popular dish in the U.S. Here the equivalent would be called a coffee cake but for the sake of argument lets just call it delicious! Typically made with fresh wild berries you can use frozen as well just allow a little extra time for baking. Enjoy!

Wild Blueberry Buckle

Ingredients

Units Scale
  • 1/3 cup butter
  • 3/4 cup sugar
  • 1 egg, slightly beaten
  • 2 tsp lime zest
  • 1/4 tsp almond extract
  • 1 1/2 cups all purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup whole milk
  • 1 tbsp flour
  • 11/2 cups frozen wild blueberries

TOPPING

  • 1/3 cup butter
  • 1/4 cup light brown sugar
  • 1/4 cup white sugar
  • 1/3 cup all purpose flour

 


Instructions

  1. preheat the oven to 350
  2. Place the butter, sugar, egg, lime zest and almond extract in a bowl and cream together.
  3. In a sperate bowl combine the flour, baking soda, and salt
  4. Add the flour mixture to the creamed mixture in 2 parts alternating with the milk.
  5. Combine the 1 tbsp flour with the frozen wild blueberries and mix, fold into the batter.
  6. Place batter into a prepared 8X8 baking dish.
  7. Place the topping ingredients in a bowl and mix to make a crumble, evenly place on top of the batter.
  8. Bake for 45-55 minutes or until a tester comes out clean. Cool before cutting.
