Ingredients
- 2 tbsp butter
- 1 small onion, diced
- 4 jalapenos, deseeded and diced
- 1 small can ( 4.5 oz) green chilies
- 2 garlic cloves, minced
- 1 cup whole milk
- 1 cup water
- 2 tbsp cornstarch
- 4 cups white cheddar, shredded
- 2 tbsp chopped fresh cilantro
- 1 tsp ground cumin
- 1 tsp salt
- 1/4 tsp cayenne pepper
Instructions
- Melt the butter, add the onions and jalapenos and saute until soft.
- Whisk together the milk, water and cornstarch. Add to the pan and cook over medium heat stirring constantly until it begins to thicken.
- Add the cheese and cook slowly until the cheese has melted.
- Stir in the cilantro, cumin, salt and cayenne.
