  • 2 tbsp butter
  • 1 small onion, diced
  • 4 jalapenos, deseeded and diced
  • 1 small can ( 4.5 oz) green chilies
  • 2 garlic cloves, minced
  • 1 cup whole milk
  • 1 cup water
  • 2 tbsp cornstarch
  • 4 cups white cheddar, shredded
  • 2 tbsp chopped fresh cilantro
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/4 tsp cayenne pepper


  1. Melt the butter, add the onions and jalapenos and saute until soft.
  2. Whisk together the milk, water and cornstarch. Add to the pan and cook over medium heat stirring constantly until it begins to thicken.
  3. Add the cheese and cook slowly until the cheese has melted.
  4. Stir in the cilantro, cumin, salt and cayenne.
  5. Serve with nacho chips or fresh tortilla chips.
