Turkey Meatballs with a White Wine Saffron Sauce with Saffron mashed Potatoes
- Yield: Serves 4-6 1x
Ingredients
Turkey Meatballs with White Wine Saffron Sauce
- 1 lb ground turkey
- 1 egg, lightly beaten
- 1 1/2 cup plain breadcrumbs
- 1 tsp Hot Under The Kilt Acadian cajun Seasoning
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tbsp chopped parsley
- 1 green onion, sliced
- 2 tbsp butter
White Wine Saffron Sauce
- 1 cup whipping cream*
- 1/8 tsp saffron*
- 2 shallots, chopped
- 1 small apple, diced
- 2 green onions, chopped
- 1/2 cup white wine
- Preheat oven to 375 degrees
- Combine all ingredients except the butter in a bowl, mix well and form into 12 meatballs.
- Melt the butter in an saute pan, add the meatballs and cook until browned.
- Transfer the meatballs to a baking sheet and place into the oven and cook 10-12 minutes.
- Prepare the sauce
- *Combine the whipping cream and saffron, set aside for at least 1 hour to allow the saffron to bloom.
- Return the saute pan to the heat and add the shallots, apple and green onions to the pan with the drippings and gently saute until the shallots begin to soften.
- deglaze the pan with the white wine.
- Add the cream and saffron , bring to a heavy simmer, reduce the heat and let reduce by half.
- Serve over the meatballs.
Saffron Mashed Potatoes
- 1/2 cup heavy cream
- 1/8th tsp saffron
- 2 1/2 lbs yellow potatoes, quartered
- 2 tbsp salt
- 1/2 cup butter
- 1/2 tsp salt
- 1/2 tsp pepper
- Combine the cream and saffron and set aside for 1 hour to allow the saffron to bloom.
- Add the potatoes to a pot, cover with cold water and add the 2 tbsp of salt.
- Bring to a boil and cook until fork tender.
- Drain the potatoes, add the cream and saffron, butter, remaining salt and pepper and mash until smooth.
