Turkey and Wild Blueberry Fresh Rolls

Ingredients

For the Rolls:

  • 8 rice paper wrappers
  • 2 cups cooked turkey breast, thinly sliced or shredded
  • 1 cup shredded carrots
  • 1 cup thinly sliced red bell pepper
  • 1 cup cucumber, julienned
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh basil leaves
  • 1 avocado, thinly sliced
  • 4 green onions, thinly sliced
  • 1 cup rice vermicelli noodles, cooked according to package instructions

For the Dipping Sauce:

  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 garlic clove, minced
  • 1 tsp fresh ginger, grated
  • 1 red chili, finely chopped (optional for heat)
  • 1 tbsp fresh cilantro, finely chopped

 

 

 


Instructions

  1. Prepare the Ingredients:
  2. Cook and shred or thinly slice the turkey breast.
  3. Prepare the vegetables: shred the carrots, slice the red bell pepper, julienne the cucumber, and thinly slice the avocado and green onions.
  4. Cook the rice vermicelli noodles according to package instructions and set aside.
  5. Make the Dipping Sauce:
  6. In a small bowl, whisk together the soy sauce, rice vinegar, lime juice, honey, sesame oil, minced garlic, grated ginger, chopped red chili (if using), and chopped fresh cilantro. Adjust the flavors to taste.
  7. Assemble the Rolls:
  8. Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 5-10 seconds or until it becomes soft and pliable. Lay it flat on a clean, damp kitchen towel or cutting board.
  9. Arrange a small amount of each filling ingredient (turkey, shredded carrots, red bell pepper, cucumber, mint leaves, cilantro leaves, basil leaves, avocado, green onions, and rice vermicelli noodles) in the center of the wrapper.
  10. Fold the bottom of the wrapper over the filling, then fold in the sides, and roll it up tightly to enclose the filling. Repeat with the remaining wrappers and fillings.
  11. Serve:
  12. Arrange the fresh rolls on a serving platter.
  13. Serve immediately with the dipping sauce on the side.
