Traditional Newfoundland Beet Salad
The first time I saw this one my plate in Newfoundland I was a bit taken aback, not quite sure what it was, but I was pleasantly surprised, although I love both mashed potatoes and pickled beets so I’m not sure why I thought I wouldn’t like it. If the texture of mashed potatoes in a salad throws you off feel free to simply dice the potatoes.

- 2 lbs potatoes, peeled, and cooked
- 1/4 cup Heavy cream
- 2 tbsp Mayonnaise
- 2 hard boiled eggs, chopped
- 1/2 cup Pickled Beets, finely diced
- 1 cup Pickled beet juice
- 1 tspSalt
- 1/2 tsp Pepper
Instructions
- Place the potatoes and cream in a large bowl and mash until smooth.
- Stir in the mayonnaise, eggs, pickled beets, beet juice, salt and pepper.
- Refrigerate until cold. Perfect served on a cold plate.

Hey there. I am a Newfie and I never in my life made or eaten beet salad with heavy cream or eggs in it. This must be a Mainland version. We also whip our potatoes.
