Onion and Apple Roast Pork 

This is one of my favorite ways to cook a pork roast on a cold winter day, the house will smell incredible and of course the amazing onions from Country Magic Produce in the valley, local apples and local pork makes for awesome flavors! Let me know how you make out with this one!

Serves 4 to 6


5 yellow onions julienned
5 apple cored and cut into fourths
4 lb pork roast
2 tbsp Dijon mustard
2 tbsp steak spice
1 tsp dry thyme
1 tsp dry rosemary
2 bay leaf
1 ½ cup red wine
½ cup chicken broth


Preheat oven to 350°F. In a roasting pan place onion and apple. Add thyme, rosemary and bay leaf. Pour in the red wine and broth, place pork roast on top of the onions and apple; spread Dijon mustard over roast. Sprinkle with steak spice. Roast for 1½ hours.

Remove roast from pan let rest for 10 minutes then slice. Meanwhile remove bay leaf from pan and stir the onion apple mixture together loosening any bits stuck to the bottom, place your pan over medium heat and let reduce. Mash the mixture and then serve compote with the sliced pork and you favorite fixing.
