Smoked Salmon and Peppered Blueberry Panini
4 slices multi grain Panini bread
2 oz butter
4 oz smoked salmon
4 oz Verdict d’Alexina
2 oz arugula or basil
2 oz peppered blueberry jam
Butter the Panini bread on one side then add blueberry jam on the non-buttered side of the bread, layer the cheese, the salmon, the arugula a little cracked pepper then cover with the other slice, bring to the Panini press and cook for approx. 3 to 4 minutes till crispy and brown, cut and serve.
