Ingredients
Haskap Maple Reduction
- 1/2 cup Haskap Highland Orchard Juice Drink
- 1/2 cup balsamic vinegar
- 1/4 cup maple syrup
Place Haskap Highland Orchard Juice Drink , balsamic vinegar and maple in a saucepan over medium-high heat. Bring to a low boil, stirring to make sure the maple dissolves. Continue to simmer until it starts to coat your spoon, about 5-8 minutes. Set aside for plating.
Grilled Chicken Breasts
- 2 chicken breasts boneless, skinless
- 1 tbsp olive oil
- Salt and pepper
Rub the chicken breast with the oil and then season with the salt and pepper. Grill for about 15 minutes on high heat or until a meat thermometer registers an internal temperature of 165-168, let rest then slice on an angle.
Haskap and Maple Fresh Grilled Vegetables
- 1/2 lb fresh asparagus, trimmed
- 1 red onion, cubed
- 1/2 lb carrots, julienne
- 1/2 cup snow peas
- 1/4 cup Haskap Highland Orchard Juice Drink
- 1/4 cup maple syrup
- 2 tbsp olive oil
- 1 1/2 tsp sea salt
Marinate vegetables in Haskap Highland Orchard Juice Drink maple syrup, olive oil and sea salt. Place in 9×13 baking dish and bake at 350°F for 20 minutes or if preferred grill over medium heat for 6 to 8 minutes.
