Snow Crab Salad with Balsamic Strawberries

This salad was super quick to put together thanks to the ready to use 8oz bags of crab meat available from Logan’s Daily Catch. We also used  balsamic vinegars along with some beautiful olive oil in place of a dressing, that is in fact how I prefer to dress all of my summer salads. Throw in some fresh strawberries and you’ve got a salad made in heaven!

Snow Crab Salad with Balsamic Strawberries

Ingredients

Units Scale
  • 8 oz of snow crab meat
  • Juice of one lime
  • Salt and pepper to taste
  • 4 leaves of Basil chiffonade
  • 2 green onions chopped
  • 2 tbsp of olive oil

Place all the ingredients in a medium sized bowl and toss it set aside

 

  • 1 qt of fresh strawberries, hulled and cut in half
  • 2 tablespoon olive oil
  • 2 tablespoon traditional balsamic vinegar
  • Salt and pepper to taste
  • 1 tbsp fresh parsley
  1. Place in a bowl all the ingredients and toss occasionally till you’re ready to serve.
  • Leaves of Crystal or Bib lettuce.
  • 2oz feta cheese
  • slivered almonds

Instructions

  1. To assemble the salad place leaves of crisp lettuce at the base.
  2. Separate the strawberries in two or four place on the lettuce.
  3. Top with the crab mixture and do the same between two and four salad
  4. Top with slivered almonds.
  5. Drizzle the remainder of the juice from the crab onto the leaf of the lettuce
  6. Crumble 1 oz of feta per salad around the lettuce garnish with milled pepper and salt.
