Ingredients

Units Scale
  • 1 1/2 cups sushi rice
  • 2 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 pound snow crab meat, cooked and shredded
  • 1 avocado, sliced
  • 1 small cucumber, julienned
  • 1 carrot, julienned
  • 4 radishes, thinly sliced
  • 1 sheet nori, cut into thin strips
  • 2 tablespoons sesame seeds (white and black mix)
  • 2 green onions, sliced
  • Pickled ginger (optional, for serving)

 

For the Spicy Mayo:

  • 1/4 cup mayonnaise
  • 12 tablespoons sriracha (adjust to taste)
  • 1 teaspoon sesame oil
  • 1 teaspoon soy sauce

 

 


Instructions

Prepare the Sushi Rice:

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.
  3. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice. Let the rice cool to room temperature.

Prepare the Spicy Mayo:

  1. In a small bowl, whisk together the mayonnaise, sriracha, sesame oil, and soy sauce until smooth. Set aside.

Assemble the Buddha Bowl:

 

  1. Divide the sushi rice between two bowls.
  2. Arrange the snow crab meat, avocado slices, cucumber, carrot, and radish over the rice in each bowl.
  3. Drizzle the spicy mayo over the top of the bowls.
  4. Garnish with nori strips, sesame seeds, and green onions.
  5. Serve with pickled ginger on the side, if desired.
