Smoked Salmon and Peppered Blueberry Panini

An elevated panini combining the flavors of smoked salmon, creamy cheese and peppered blueberry compote.



4 slices multi grain Panini bread
2 oz butter
4 oz smoked salmon
4 oz Verdict d’Alexina (substitute brie)
2 oz arugula or basil
2 oz peppered blueberry jam


  1. Butter the Panini bread on one side then add blueberry jam on the non-buttered side of the bread.
  2. Layer the cheese, salmon, arugula a little cracked pepper then cover with the other slice
  3. Cook on Panini press for approx. 3 to 4 minutes until crispy and brown, cut and serve.
