- 1/2 lb cooked lobster meat, chopped
- 1/2 lb cooked crab meat, picked over for shells
- 1 cup shredded Mozarella cheese
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1 small red onion, finely chopped
- 1 jalapeño, seeded and finely chopped (optional)
- 8 large flour tortillas
- 2 tablespoons olive oil
- Lime wedges (for serving)
- Sour cream (for serving)
- Salsa (for serving)
- Guacamole (for serving)
Instructions
Prepare the Filling:
- In a large bowl, combine the chopped lobster meat, crab meat, Mozarella cheese, cheddar cheese, chopped cilantro, finely chopped red onion, and jalapeño (if using). Mix until well combined.
Assemble the Quesadillas:
- Lay out 4 tortillas on a flat surface. Divide the seafood mixture evenly among the tortillas, spreading it out to cover each tortilla evenly.
- Top each with another tortilla, pressing down gently to adhere.
Cook the Quesadillas:
- Heat a large skillet or griddle over medium heat. Add a small amount of olive oil to the skillet and let it warm, coating the surface.
- Place one quesadilla in the skillet and cook for 3-4 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese is melted.
- Repeat with the remaining quesadillas, adding more olive oil to the skillet as needed.
Serve:
- Cut each quesadilla into wedges.
- Serve with lime wedges, sour cream, salsa, and guacamole on the side.
