Seafood Quesadillas

Ingredients

  • 1/2 lb cooked lobster meat, chopped
  • 1/2 lb cooked crab meat, picked over for shells
  • 1 cup shredded Mozarella cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped (optional)
  • 8 large flour tortillas
  • 2 tablespoons olive oil
  • Lime wedges (for serving)
  • Sour cream (for serving)
  • Salsa (for serving)
  • Guacamole (for serving)

 


Instructions

Prepare the Filling:

  1. In a large bowl, combine the chopped lobster meat, crab meat, Mozarella cheese, cheddar cheese, chopped cilantro, finely chopped red onion, and jalapeño (if using). Mix until well combined.

Assemble the Quesadillas:

  1. Lay out 4 tortillas on a flat surface. Divide the seafood mixture evenly among the tortillas, spreading it out to cover each tortilla evenly.
  2. Top each with another tortilla, pressing down gently to adhere.

Cook the Quesadillas:

  1. Heat a large skillet or griddle over medium heat. Add a small amount of olive oil to the skillet and let it warm, coating the surface.
  2. Place one quesadilla in the skillet and cook for 3-4 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese is melted.
  3. Repeat with the remaining quesadillas, adding more olive oil to the skillet as needed.

Serve:

  1. Cut each quesadilla into wedges.
  2. Serve with lime wedges, sour cream, salsa, and guacamole on the side.
