Ingredients

  • 6 smoked sausages, sliced
  • 4 cups peeled, cubed sweet potatoes
  • 3 cups Brussels sprouts, trimmed, cut in half
  • 1/4 cup olive oil
  • 1 tbsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp Hot Under The Kilt Acadian Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 sprigs fresh thyme
  • 1/4 cup dried cranberries
  • 1/4 cup pumpkin seeds

Instructions

  1. Preheat oven to 400.
  2. Place the sausage, sweet potato, Brussels sprouts, olive oil, oregano, basil, H.U.T.K, garlic powder, and salt and pepper in a large bowl, toss well ensuring that everything is covered in oil and seasoning.
  3. Spread onto a parchment lined baking sheet.
  4. Top with the thyme, place in the oven and bake for 20 minutes, toss and bake for an additional 10 minutes or until the vegetables are fork tender.
  5. Toss in the cranberries and top with the pumpkin seeds.
