- 6 smoked sausages, sliced
- 4 cups peeled, cubed sweet potatoes
- 3 cups Brussels sprouts, trimmed, cut in half
- 1/4 cup olive oil
- 1 tbsp dried oregano
- 1 tsp dried basil
- 1/2 tsp Hot Under The Kilt Acadian Cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 sprigs fresh thyme
- 1/4 cup dried cranberries
- 1/4 cup pumpkin seeds
Instructions
- Preheat oven to 400.
- Place the sausage, sweet potato, Brussels sprouts, olive oil, oregano, basil, H.U.T.K, garlic powder, and salt and pepper in a large bowl, toss well ensuring that everything is covered in oil and seasoning.
- Spread onto a parchment lined baking sheet.
- Top with the thyme, place in the oven and bake for 20 minutes, toss and bake for an additional 10 minutes or until the vegetables are fork tender.
- Toss in the cranberries and top with the pumpkin seeds.
