Sausage & Egg Stuffed Breakfast Biscuits

This is a delicious alternative to those fast food breakfast sandwiches and they can be just as quick as well, simply prepare on the weekend, freeze them, thaw the night before then pop them into the toaster oven or microwave for a quick on the go breakfast. If you want to save even more time skip the homemade sausage patties and use a store bought version.

Sausage & Egg Stuffed Breakfast Biscuits

Ingredients

Cheddar & Chive Biscuits

  • 4 cups flour
  • 2 tbsp baking powder
  • 1 tsp salt
  • 1/2 cup shredded cheddar
  • 2 tbsp chopped chives
  • 1 cup frozen butter, grated
  • 1 1/2 cups buttermilk

Sausage Patties

  • 1 lb ground pork
  • 1 tbsp dried oregano
  • 2 tbsp chopped chives
  • 2 tbsp chopped green onions
  • 1 tsp ground fennel seeds
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 egg, beaten

Scrambled Eggs

  • 4 large eggs
  • 1/4 cup 35% cream
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp jam of your choice

Instructions

  1. Preheat oven to 450F, Line a baking sheet with parchment paper.
  2. Place the ground pork in a bowl, add the remaining ingredients.
  3. Form into 8 thin patties, fry until cooked through and set aside.
  4. Place the flour, baking soda, and salt into a bowl.
  5. Add in the grated butter, cheddar cheese and chives, use a fork and mix to combine.
  6. Add the buttermilk a bit at a time until a soft dough is formed.
  7. Turn dough out onto a floured surface and roll dough to a 1/2″ thickness.
  8. Cut out 16  four inch rounds.
  9. Place 8 rounds onto the baking sheet.
  10. Combine the eggs, cream, salt and pepper and scramble the eggs.
  11. To assemble place 1 tsp of jam on the eight rounds, top with a sausage patty and scrambles eggs.
  12. Stretch the remaining rounds over the filling and use a fork to pinch the edges.
  13. Bake for 15 minutes.
