Rock Crab and Almond Crusted Haddock

Ingredients

  • 2 lbs fresh haddock fillets
  • 1/2 lb rock crab meat
  • 25 buttery crackers, crushed
  • 1/4 cup finely diced yellow pepper
  • 1/2 cup slivered almonds
  • 2 tbsp chopped fresh parsley
  • 3 tbsp mayonnaise
  • juice of 1/2 lemon
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 350F
  2. Pat the haddock fillets dry, and place on a parchment lined baking tray.
  3. Place the rock crab, crushed crackers, yellow pepper, almonds, parsley, mayonnaise ,salt and pepper into a bowl, mix well.
  4. Drizzle the haddock with 1/2 of the olive oil, top with the crab mixture.
  5. Drizzle the crab mixture with the remaining olive oil.
  6. Bake for 15-20 minutes or until the topping is golden brown.
