Rock Crab and Almond Crusted Haddock
Fresh haddock is wonderful and rock crab is just fine but put them together and they’re absolutely divine!

- 2 lbs fresh haddock fillets
- 1/2 lb rock crab meat
- 25 buttery crackers, crushed
- 1/4 cup finely diced yellow pepper
- 1/2 cup slivered almonds
- 2 tbsp chopped fresh parsley
- 3 tbsp mayonnaise
- juice of 1/2 lemon
- 1/2 tsp sea salt
- 1/4 tsp pepper
- 2 tbsp olive oil
Instructions
- Preheat the oven to 350F
- Pat the haddock fillets dry, and place on a parchment lined baking tray.
- Place the rock crab, crushed crackers, yellow pepper, almonds, parsley, mayonnaise ,salt and pepper into a bowl, mix well.
- Drizzle the haddock with 1/2 of the olive oil, top with the crab mixture.
- Drizzle the crab mixture with the remaining olive oil.
- Bake for 15-20 minutes or until the topping is golden brown.
- Prep Time: 15 minutes
- Cook Time: 20 minutes

Just wanted to let you know that I tried out the “rock crab and almond crusted haddock” this past weekend. I had company for dinner and used them as guinea pigs, lol!! I didn’t have rock crab so I used snow crab. It was an absolute SUCCESS!! They, LOVED, LOVED it! (Sorry, no photo)
