Rhubarb and Apple Crisp

Ingredients

  • 2 cups rhubarb chopped into 1/2 inch pieces
  • 2 cups apples, chopped
  • 1/3 cup white sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons quick cook tapioca
  • 1/2 cup flour
  • 1/4 cup plus 2 tbsp cold butter
  • 2/3 cup oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cut brown sugar

 

 


Instructions

  1. Preheat oven to 350°
  2.  Butter an 8×8 baking dish
  3. In a bowl combine the rhubarb, Apple, sugar, cinnamon and quick cook tapioca. Mix well in place in baking dish
  4. Add the flour to another bowl
  5. Grate or finely chop 1/4 cup of the butter and add to the flour.
  6. Combine the oats, baking powder, brown sugar, salt. Mix well and add to the flour.
  7. Top the fruit with the flour mixture and add the remaining two tablespoons of butter to the top.
  8. Place in the oven and bake for 40 to 45 minutes or until the top is crisp.
  9. Serve warm with fresh whipped cream or vanilla ice cream.
