Rhubarb and Apple Crisp
Personally I love tart rhubarb and enjoy when my desserts have that puckering effect but i get that not everyone feels the same way so combing another fruit such as apples makes the dish a bit sweeter, you can use any other fruit really such as blueberries or strawberries as long as you end up with 5 cups of fruit all together.

- 2 cups rhubarb chopped into 1/2 inch pieces
- 2 cups apples, chopped
- 1/3 cup white sugar
- 1 teaspoon cinnamon
- 2 tablespoons quick cook tapioca
- 1/2 cup flour
- 1/4 cup plus 2 tbsp cold butter
- 2/3 cup oats
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cut brown sugar
Instructions
- Preheat oven to 350°
- Â Butter an 8×8 baking dish
- In a bowl combine the rhubarb, Apple, sugar, cinnamon and quick cook tapioca. Mix well in place in baking dish
- Add the flour to another bowl
- Grate or finely chop 1/4 cup of the butter and add to the flour.
- Combine the oats, baking powder, brown sugar, salt. Mix well and add to the flour.
- Top the fruit with the flour mixture and add the remaining two tablespoons of butter to the top.
- Place in the oven and bake for 40 to 45 minutes or until the top is crisp.
- Serve warm with fresh whipped cream or vanilla ice cream.
