Red Velvet Cake with Cream Cheese Frosting

Ingredients

  • 3 cups flour
  • 3 cups sugar
  • 1/2 cup cornstarch
  • 1/2 cup cocoa powder
  • 2 tsp baking powder
  • 1 tbsp baking soda
  • 1 tsp salt
  • 3 large eggs
  • 1 1/2 cup full fat buttermilk
  • 1/2 cup vegetable oil
  • 1 1/4 cup warm water
  • 2 tsp vanilla
  • 1 tsp vinegar
  • 2 ounces red food coloring
Cream Cheese Frosting
  • 2 8oz packages of cream cheese softened
  • 1 cup butter softened
  • 2 tsp vanilla
  • 46 cups icing sugar

Instructions

 

  1. Preheat oven to 350
  2. Butter 3 9-inch cake pans and line with parchment paper.
  3. Place the dry ingredients in the bowl of a stand mixer and mix on low until well combined.
  4. Add the wet ingredients and the food coloring and mix on medium for 3 -4 minutes.
  5. Evenly divide the batter between the pans and bake for 30 minutes or until a cake tester comes out clean.
  6. Remove the cakes and place on a cooling rack. Cool completely.
  7. Place the cream cheese and butter in the bowl of a stand mixer, cream until well combined. Add the vanilla and combine.
  8. Add the icing sugar in four equal portions, mixing just until incorporated. Do not over mix.
  9. Frost the cooled cakes
  10. Store in the refrigerator.
