Parmesan Roasted Carrots

Ingredients

  • 6 medium carrots, peeled, cut in half and then thinly sliced lengthwise
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp Hot Under the Kilt Acadian cajun seasoning
  • 2/3 cup grated parmesan cheese
  • fresh parsley
  • sea salt

Instructions

  1. Preheat the oven to 400
  2. Place the carrots in a large bowl.
  3. Top with the olive oil, garlic and spices, mix well.
  4. Place 1/4th of the parmesan cheese on a baking sheet, roll the carrots in the remaining parmesan and place on the baking sheet.
  5. Roast for 25 minutes.
  6. Remove from the oven and top with chopped parsley and sea salt
