- 1/4 cup butter
- 8 bread slices of your choice
- 1 cup Nova Scotia Wild Blueberries
- 2 tbsp ricotta cheese
- 2 tbsp sour cream
- 2 tbsp Greek yogurt
- Juice of 1/2 lime
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup parmesan cheese
- 1/2 cup mozzarella cheese
- 8 oz grilled chicken
- 1 avocado, sliced
- 8 slices crisp cooked bacon
Instructions
- Combine the Wild Blueberries, ricotta, sour cream, Greek yogurt, lime, salt, pepper and 1 tbsp parmesan and mix well.
- Use half of the butter to spread on four slices of bread, place these pieces of bread butter side down in a sauté pan.
- Spread ¼ of the sauce on each of the slices of bread.
- Add a layer of mozzarella, top with the bacon, chicken, avocado and the remaining mozarella and parmesan cheese.
- Top with the second slice of bread and spread with the remaining butter.
- Place the sauté pan over a medium high heat and grill until the sandwich is golden brown, turn and repeat on the other side.
