Lobster Nachos with classic Cheese Sauce

Ingredients

Units Scale
  • 1 red pepper
  • 1 green pepper
  • 1 red onion
  • 1 jalapeno pepper, ( remove the seeds for less heat)
  • 1 lb of lobster meat
  • 1 bag of corn tortilla chips
  • 8 oz mozzarella cheese
  • 1 cup Classic Cheese sauce ( Recipe here)

Instructions

  1. Heat oven to 400
  2. Begin by preparing the cheese sauce. Once ready, set aside.
  3. Prepare the vegetables for the nachos by chopping them into bite size pieces.
  4. Chop the lobster into bite sized pieces.
  5. To assemble, place half of the nacho chips on a parchment lined baking tray, top with half of the vegetables, and half of the mozzarella, half of the lobster meat and a generous drizzle of cheese sauce.
  6. Place the remaining chips on top. Top with the remaining vegetables. Add remaining mozzarella,  lobster meat and more classic cheese sauce.
  7. Place the baking pan into the oven and bake for 15 minutes or until the cheese has melted and the nachos are turning golden.
