Lobster Nachos with classic Cheese Sauce

- 1 red pepper
- 1 green pepper
- 1 red onion
- 1 jalapeno pepper, ( remove the seeds for less heat)
- 1 lb of lobster meat
- 1 bag of corn tortilla chips
- 8 oz mozzarella cheese
- 1 cup Classic Cheese sauce ( Recipe here)
Instructions
- Heat oven to 400
- Begin by preparing the cheese sauce. Once ready, set aside.
- Prepare the vegetables for the nachos by chopping them into bite size pieces.
- Chop the lobster into bite sized pieces.
- To assemble, place half of the nacho chips on a parchment lined baking tray, top with half of the vegetables, and half of the mozzarella, half of the lobster meat and a generous drizzle of cheese sauce.
- Place the remaining chips on top. Top with the remaining vegetables. Add remaining mozzarella, lobster meat and more classic cheese sauce.
- Place the baking pan into the oven and bake for 15 minutes or until the cheese has melted and the nachos are turning golden.
