- 1 lb lobster meat
- 1/2 an English cucumber, finely diced
- 1 rib of celery, finely diced
- 1/2 tsp Hot Under The Kilt Acadian Cajun seasoning
- 2 tbsp mayonnaise
- Juice of 1 lime
- 1/2 avocado, mashed
- 2 tbsp fresh chopped dill
- Boston Bib leaves
Instructions
- Chop the lobster meat and place into a bowl.
- Add the cucumber, celery, H.U.T.K, nad mayonnaise, mix well.
- Add the lime juice and avocado and mix to combine, fold in the chopped dill.
- Fill the Boston Bib leaves with a generous portion of the lobster mix and garnish with a sprig of dill.
