Today’s guest was Liam O’Rourke General Manager of Larchwood Canada. Although Liam is not Lebanese (the Irish name might have been a giveaway) Liam grew up on the North side of Sydny in a multicultural neighborhood and these recipes for Lebanese snack food came from a friend of his moms, whether they are authentic or not might be up for debate but what isn’t up for debate is the fact that both recipes are delicious!

Kibbie and Fatayer

Ingredients

Kibby

  • 2 tbsp olive oil
  • 2 lbs ground lamb
  • 1 yellow onion, diced
  • 1 1/2 cups cracked wheat, soaked in water for 1 hour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp all spice
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  1. preheat oven to 400. Grease an 8X8 pan with the olive oil.
  2. Drain the cracked wheat and combine it along with the other ingredients in a bowl, mix well.
  3. Place in the prepared pan and bake for 45-50 hour.
  4. Serve with tzatziki sauce or any sauce of choice.

Fatayre

  • Pizza Dough (or favorite dough of choice)
  • 2 tbsp olive oil
  • 16 ounces spinach
  • 1 onion diced
  • 1/2 cup pine nuts
  • 1/2 tsp all spice
  • 3 ounces crumbles feta
  1. Preheat oven to 400.
  2. Place the olive oil in a large saute pan and heat, add the spinach, and onion, cover and cook until the spinach is wilted, add the pine nuts, saute for 3 – minutes.
  3. Remove from heat and fold in the feta.
  4. Roll the dough into thin 4″ rounds.
  5. Place a tbsp of spinach in the center, fold the dough into a triangle around the filling. See Photos.
  6. Bake for 20 minutes or until golden brown.
