Italian Meatball Bombs

This might just be the perfect Super Bowl dish, the perfect ” feed the rowdy teens” dish, In fact it may be the perfect anytime dish, if you’re pinched for time you could always throw it together with some ready made meatballs and jarred marinara sauce and you could potentially have a meal on the table in under 30.

Italian Meatball Bombs

Ingredients

Meatballs

  • 1 1/2 lb lean hamburger
  • 1 egg, lightly beaten
  • 1/4 cup breadcrumbs
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 1/4 tsp chili flakes
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp Badass Burger Booster ( optional)
  • 1 tbsp fresh chopped parsley

Marinara Sauce

  • 1 28oz can diced tomatoes
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 small can tomato sauce
  • 1 tbsp tomato paste
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 4 sprigs fresh thyme
  • 1 tsp balsamic vinegar
  • 1 tsp white sugar
  • 1 jar sundried tomato pesto
  • 1 tbsp olive oil
  • 12 soft dinner rolls
  • 1/4 cup garlic butter, melted
  • 4 os shredded mozzarella cheese
  • 4 oz asiago cheese

 


Instructions

  1. Preheat the oven to 350F
  2. Combine all of the meatball ingredients together, mix well and form into 12 meatballs.
  3. Heat 2 tbsp olive oil into a large pot.
  4. Add the meatballs and sauté until browned all over.
  5. Remove the meatballs from the pot and place on a cooling rack that has been placed on a baking sheet. Bake for 10 minutes.
  6. Remove from the oven and set aside.
  7. Place the onions and garlic into the pot that the meatballs were cooked in. Cook until the onions begin to soften.
  8. Add the tomatoes, tomato sauce, tomato paste, seasonings, balsamic vinegar and sugar.
  9. Bring to a boil, reduce to a simmer and cook for 15-20 minutes, stirring occasionally.
  10. Stir in the sundried tomato pesto and heat through.
  11. Remove the center from the buns being careful not to cut all the way through. Place them in a 9 X 13 dish.
  12. Drizzle the garlic butter over the buns making sure to get some inside as well.
  13. Add a tsp or so of the marinara sauce into the bun.
  14. Add a tsp or so of cheese.
  15. Place a meatball into each cavity pushing it down as necessary.
  16. Pour the remaining marinara sauce over the buns making sure to get it into all the crevices.
  17. Top with the cheese.
  18. Place in the oven and cook until the cheese is melted and bubbly, about 15-20 minutes.
