Description
- 1 lb Jonah crab, drained
- 1 ripe avocado, halved
- 3 hard boiled eggs, chopped
- 2 green onions, sliced
- 1 tbsp. chopped fresh parsley
- 1 heaping tbsp. mayonnaise
- 1/2 tsp Hot Under The Kilt Acadian Cajun seasoning ( sub any Cajun seasoning or Old Bay)
- Juice of 1/2 lemon
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 fresh baguette
- 2 tbsp mayonnaise
- 1/2 cup shredded romaine lettuce
- 1 oz. fresh grated parmesan cheese
- 1 tbsp olive oil
Ingredients
- Place the Jonah crab, avocado, eggs, green onions, fresh parsley, 1 heaping tbsp. mayonnaise, Hot Under The Kilt Acadian Cajun seasoning, lemon juice, salt and pepper into a large bowl and mix well.
- Cut a V along the top of the baguette lengthwise and remove it from the loaf, push back the bread inside the baguette to create a well.
- Spread with remining 2 tbsp. of mayonnaise, add the shredded lettuce.
- Fill the baguette with the crab mixture, top with the parmesan cheese and finish with an olive oil drizzle.
