Incredible Jonah Crab, Egg and Avocado Sandwich

This sandwich filling is super easy, super quick and super versatile. Stuff it into a fresh crispy baguette like we did or serve it with your favorite tortilla chips.

We used ingredients for two of or amazing partners; Logan’s Daily Catch for the amazingly delicious crab and Liquid Gold for that final drizzle of rich, buttery olive oil that takes this ‘wich over the top!

Description

  • 1 lb Jonah crab, drained
  • 1 ripe avocado, halved
  • 3 hard boiled eggs, chopped
  • 2 green onions, sliced
  • 1 tbsp. chopped fresh parsley
  • 1 heaping tbsp. mayonnaise
  • 1/2 tsp Hot Under The Kilt Acadian Cajun seasoning ( sub any Cajun seasoning or Old Bay)
  • Juice of 1/2 lemon
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 fresh baguette
  •  2 tbsp mayonnaise
  • 1/2 cup shredded romaine lettuce
  • 1 oz. fresh grated parmesan cheese
  • 1 tbsp olive oil

Ingredients

  1. Place the Jonah crab, avocado, eggs, green onions, fresh parsley, 1 heaping tbsp. mayonnaise, Hot Under The Kilt Acadian Cajun seasoning, lemon juice, salt and pepper into a large bowl and mix well.
  2. Cut a V along the top of the baguette lengthwise and remove it from the loaf, push back the bread inside the baguette to create a well.
  3. Spread with remining 2 tbsp. of mayonnaise, add the shredded lettuce.
  4. Fill the baguette with the crab mixture, top with the parmesan cheese and finish with an olive oil drizzle.
