Haddock Bites
- 1lb fresh haddock, cut into 1 ” pieces
- 1 cup flour
- 2 eggs, lightly beaten
- 1 cup breadcrumbs
- 1 tbsp of oregano
- 1 tbsp parmesan cheese
Spicy Cajun Mayo
- 1 cup mayonnaise
- 1 lemon, juice only
- 2 tbsp jalapeno pepper, mined
- 2 tbsp red onion, minced
- 1 tbsp Hot Under the Kilt Acadian Cajun seasoning ( substitute Old bay)
Instructions
- Begin by combining all of the ingredients for the mayo into a bowl and mixing well, refrigerate until needed.
- Preheat oil to 350 F ( we used canola oil)
- Place the flour into 1 bowl, the egg and cream into a 2nd and the breadcrumbs, parmesan cheese, oregano and HUTK into a third.
- Ensure that the fish is dry, dip into the flour, shaking off any excess, dip into the egg mixture allowing excess to drip off, then dip into the bread crumbs.
- Hold the fish and gently “swirl” it onto the hot oil. Allow to cook until the fish floats to the top.
- Remove from the fryer and place onto a paper towel lined plate.
- Serve with the Spicy Cajun Mayo and a side salad or French fries.
