Haddock Bites with Spicy Cajun Mayo

Have you ever found your self in this dilemma….you need to feed four but you only have enough for two? Or so you think. If you take 1lb of haddock and bread fillets you’ll have enough for two, but turn those haddock fillets into haddock bites and that 1 lb will easily feed all your guests, sure there isn’t any more food but it comes down to perception and plate coverage….a trick that restaurants have been using for years! Haddock Bites with Spicy Cajun Mayo

Ingredients

Haddock Bites

  • 1lb fresh haddock, cut into 1 ” pieces
  • 1 cup flour
  • 2 eggs, lightly beaten
  • 1 cup breadcrumbs
  • 1 tbsp of oregano
  • 1 tbsp parmesan cheese

Spicy Cajun Mayo

  • 1 cup mayonnaise
  • 1 lemon, juice only
  • 2 tbsp jalapeno pepper, mined
  • 2 tbsp red onion, minced
  • 1 tbsp Hot Under the Kilt Acadian Cajun seasoning ( substitute Old bay)

Instructions

  1. Begin by combining all of the ingredients for the mayo into a bowl and mixing well, refrigerate until needed.
  2. Preheat oil to 350 F ( we used canola oil)
  3. Place the flour into 1 bowl, the egg and cream into a 2nd and the breadcrumbs, parmesan cheese, oregano and HUTK into a third.
  4. Ensure that the fish is dry, dip into the flour, shaking off any excess, dip into the egg mixture allowing excess to drip off, then dip into the bread crumbs.
  5. Hold the fish and gently “swirl” it onto the hot oil. Allow to cook until the fish floats to the top.
  6. Remove from the fryer and place onto a paper towel lined plate.
  7. Serve with the Spicy Cajun Mayo and a side salad or French fries.
