Grilled Summer Veggie Salad with Wild Blueberry Vinaigrette recipe

Salad

  • 1 lb Asparagus, trimmed
  • 2 Pears, sliced
  • 2 Apples, sliced
  • 1/2 red onion, sliced
  • 1/2 lb mushrooms, sliced
  • 2 tbsp olive oil
  • 1 tsp Hot Under The Kilt Acadian Cajun Seasoning

 

 

Wild Blueberry Vinaigrette

 

 


Instructions

  1. Place the vegetables and fruit into a bowl, add the olive oil and Acadian Cajun seasoning, toss well.
  2. Place onto a preheated medium high grill , grill until caramelized.
  3. Place all of the ingredients for the salad dressings into a blender and pulse until it emulsifies. Refrigerate for 30 minutes.
  4. Serve the salad with the dressing on the side.
