Grilled Anti Pasti Vegetables
What a fabulous day we had on Friday! We had a blast in Grand Barachois NB with Bob from Subaru of Moncton and the fantastic people from Friends of the Moncton Hospital who were celebrating a VERY successful fundraising campaign!
We grilled beef and chicken and served it with Grilled Anti Pasti vegetables. Perfect food for entertaining and sharing with friends!

- 1 bunch asparagus snapped
- 2 medium sized red onion cut in quarters
- 2 bell pepper color of your choice
- 1 clamshell of cherry tomatoes
- 1/2 cup of olive oil
- 1/4 cup of balsamic vinegar
- 1 tsp of salt
- 1/4 tsp pepper
- 1 tbsp grated Ginger
Instructions
Place all of the vegetables in a large bowl
Add the oil, balsamic vinegar and seasoning. Toss and grill a mesh grill mat over high until tender.
