Ingredients

  • 1/4 cup butter
  • 8 slices bread of your choice
  • 2 tbsp ricotta cheese
  • 2 tbsp sour cream
  • 2 tbsp Greek yogurt
  • Juice of 1/2 lime
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup parmesan cheese, divided
  • 1/2 cup mozzarella cheese
  • 8 oz snow crab meat
  • 1 avocado, sliced
  • 8 slices crisp cooked bacon

 

 

 


Instructions

  1. Use half of the butter to spread on four slices of bread, place these pieces of bread butter side down in a cool sauté pan.
  2. Combine the ricotta, sour cream, Greek yogurt, lime, salt, pepper and 1 tbsp parmesan and mix well.
  3. Spread a fourth of the sauce on each of the slices of bread.
  4. Add a layer of mozzarella and parmesan cheese, top with the bacon, snow crab, avocado and the remining cheese.
  5. Top with the second slice of bread and spread with the remaining butter.
  6. Place the sauté pan over a medium high heat and grill until the sandwich is golden brown, turn and repeat on the other side.
