- Yield: Serves 4
Ingredients
- 1 medium cauliflower, cut into florets
- 2 large carrots, sliced
- 1 sweet potato, cut into 1” cubes
- 3 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp coriander
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp Hot Under The Kilt Acadian Cajun seasoning
- 4 cups chopped kale
- 2 cups cooked quinoa
- 1/4 cup chopped pistachios
Turmeric Dressing
- 1/4 cup olive oil
- 1/4 cup tahini
- 1 tbsp rice wine vinegar
- 1 tbsp honey
- 2 tsp chili sauce
- 1/2 tsp curry powder
- 1/4 tsp turmeric
- 1/4 tsp salt
Instructions
- Preheat oven to 425.
- Toss the cauliflower, carrots, and sweet potato with the olive oil and spices.
- Roast for 30 minutes, tossing half way through.
- Once the vegetables are fork tender toss in the kale and set aside.
- Combine the dressing ingredients into a bowl and whisk until smooth.
- Divide the hot quinoa between four serving bowls. Top with roasted vegetables, drizzle with dressing and finish with chopped pistachios.
