Gluten Free Morning Glory Muffins

Ingredients

  • 1/4 cup natural peanut butter
  • 1 medium banana
  • 1 egg
  • 1 tbsp olive oil
  • 1/3 cup honey
  • 1/2 cup gluten free rolled oats
  • 2 tbsp ground flax
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnomon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1 large carrot, grated
  • 1 apple. grated
  • 1/2 cup raisins

Instructions

  1. Preheat the oven to 375F.
  2. Place all of the ingredients EXCEPT the carrot, apple and raisins into a blender of food processor and blend until smooth.
  3. Pour the batter into a bowl and fold in the carrots, apple, and raisins.
  4. Line 8-12 muffin cups with liners and fill 3/4 full.
  5. Bake for 20-25 minutes or until a cake tester inserted in the middle comes out clean.
