- 1/4 cup natural peanut butter
- 1 medium banana
- 1 egg
- 1 tbsp olive oil
- 1/3 cup honey
- 1/2 cup gluten free rolled oats
- 2 tbsp ground flax
- 1 tsp vanilla
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnomon
- 1/2 tsp ground ginger
- 1/4 tsp nutmeg
- 1 large carrot, grated
- 1 apple. grated
- 1/2 cup raisins
Instructions
- Preheat the oven to 375F.
- Place all of the ingredients EXCEPT the carrot, apple and raisins into a blender of food processor and blend until smooth.
- Pour the batter into a bowl and fold in the carrots, apple, and raisins.
- Line 8-12 muffin cups with liners and fill 3/4 full.
- Bake for 20-25 minutes or until a cake tester inserted in the middle comes out clean.
