Fruit and Tomato Cobbler

Ingredients

Units Scale
  • 2 cups Blueberries
  • 2 cups Blackberries
  • 2 cups hulled halved strawberries
  • 2 cups grape tomatoes halved
  • 1/3 cup sugar
  • 3 tbsp corn starch
  • 1 tsp vanilla
  • 1 tsp lemon juice
Topping
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/3 cup sugar
  • 1/3 cup butter
  • 1 cup whole milk

 


Instructions

  1. Place the first 8 ingredients into a baking dish and set aside
  2. Add the flour, baking powder and salt to a bowl.
  3. Cut in the butter.
  4. Stir in the milk to make a loose batter. Drop into the top of the cobbler and sprinkle with a bit more white sugar.
  5. Place into a preheated 350 degree oven for 60 minutes.
