Fried Chicken Sandwich

- 4 boneless chicken thighs
- 1 1/4 cup Buttermilk
- 2 tbsp Hot Under The Kilt Acadian Cajun Seasoning, divided
- 1 cup All purpose flour
- 3 Eggs, lightly beaten
- 1 cup Bread crumbs
- 3/4 cup Canola oil
- 8 slices Bacon, cooked
- Lettuce
- Tomato slices
- 1/2 cup Mayonnaise
- 1/4 cup Honey Citrus vinaigrette
- 1/2 tsp Some like it Hot Mustard ( sub deli mustard of your choice)
- 4 buns of your choosing
Instructions
- Place the chicken thighs, one at a time, between parchment paper, or in a ziplock bag, and pound until thin, ensuring that you do not puncture the skin.
- Place the buttermilk in a large bowl and add one tablespoon of Hot Under The Kilt Acadian Cajun seasoning. Let marinate for at least one hour.
- Add half a tablespoon of Acadian Cajun seasoning to the flour and half a tablespoon to the bread crumbs.
- Add two tablespoons of the buttermilk to the eggs beating well.
- Dredge the chicken breast in the flower, shake off any excess, dip into the mixture, allowing any excess to drip off and then coat with the bread crumbs.
- Place the oil in a shallow pan and heat to 365°. Add one or two of the chicken thighs to the pan, depending on the amount of room you have, and fry for 4 to 5 minutes, turn, and repeat on the other side.
- Place the cooked thighs onto a baking pan and placed into a preheated 350° oven. Repeat with the remaining thighs. Cook for 10 to 12 minutes.
- Find the mayonnaise, the vinaigrette, and the mustard and mix well.
- Place the bottom buns in front of you and spread with mayonnaise mixture.
- Add two strips of bacon to each bun, and top with tomato slices.
- Place a chicken thigh on top, add lettuce and the top bun.
