Oui Chef! Season 3 Episode 13

Farmer’s Hearty Soup: A Comforting Bowl of Rustic Flavors

There’s something undeniably comforting about a warm bowl of soup, especially when it’s brimming with hearty ingredients straight from the farm. This Farmer’s Soup is a celebration of nature’s bounty, packed with tender cubes of beef, vibrant root vegetables, and the earthiness of barley. Each spoonful tells a story of nourishment, a throwback to simpler times when meals were hearty, flavorful, and prepared with care.

The seasoning in this soup is what makes it truly special. A blend of mustard, herbes salées, and Badass Burger Booster infuses the broth with a rich and savory depth. If you’ve never cooked with herbes salées, it’s a traditional French-Canadian blend of finely chopped, salt-preserved herbs and vegetables, often including celery, leeks, parsley, and sometimes onions. This ingredient brings a burst of fresh, salty flavor to dishes, but if you don’t have herbes salées on hand, you can easily substitute it with a mixture of chopped fresh herbs like parsley and celery leaves, plus a pinch of sea salt.

To add further complexity, a touch of brown sugar balances the savory flavors, while summer savory and bay leaves lend an earthy aroma. The vibrant diced tomatoes and rich beef broth create a hearty, satisfying base, and barley adds the perfect chewy texture. This soup is the kind that simmers for a while, filling your home with mouthwatering, inviting scents that promise warmth and nourishment.

What makes this recipe even more enjoyable is its adaptability. While the traditional beef and root vegetables are a must, this soup leaves room for seasonal variations, so you can throw in whatever produce you have on hand. Perfect for cozy family meals, it keeps everyone warm and satisfied, even on the chilliest of days. Get ready to savor the rustic, comforting flavors of this soul-soothing dish, all while delighting in the timeless aroma of home-cooked goodness.
