- 1 lb ground turkey
- 1/2 cup shredded mozarella
- 4 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp chili flakes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup chopped parsley ( substitute parsley)
- 1 egg
- 2 tbsp flour
- 2 tsp olive oil
- 2 tbsp butter
- 1 small yellow onion, minced
- 1/3 cup chicken broth
- 5 ounces sun dried tomatoes, drained
- 1 3/4 cup heavy cream
- 3 cups baby spinach
- 1/2 cup grated parmesan cheese
Instructions
- Combine the ground turkey, mozzarella, garlic, basil, oregano, chili flakes, salt, pepper, parsley, egg and flour. mix well and form into medium sized meatballs. set aside.
- Add the olive oil and butter to a frying pan, heat, add the meatballs and fry until golden brown and cooked through, remove and set aside.
- To the same pan add the onions and cook until translucent.
- Add the sun dried tomatoes, cook, stirring, for 2-3 minutes.
- Add chicken broth, simmer to reduce slightly.
- Add heavy cream and bring to a gentle simmer, season with salt and pepper to taste.
- Add the baby spinach, allow to wilt, stir in the parmesan cheese and allow to melt.
- Add the meatballs back to the pan, spoon the sauce over top and allow to heat through.
