Cranberry Turkey Spinach Meatballs

Ingredients

  • 1 lb ground turkey
  • 1/2 cup shredded mozarella
  • 4 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp chili flakes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup chopped parsley ( substitute parsley)
  • 1 egg
  • 2 tbsp flour
  • 2 tsp olive oil
  • 2 tbsp butter
  • 1 small yellow onion, minced
  • 1/3 cup chicken broth
  • 5 ounces sun dried tomatoes, drained
  • 1 3/4 cup heavy cream
  • 3 cups baby spinach
  • 1/2 cup grated parmesan cheese

Instructions

  1. Combine the ground turkey, mozzarella, garlic, basil, oregano, chili flakes, salt, pepper, parsley, egg and  flour. mix well and form into medium sized meatballs. set aside.
  2. Add the olive oil and butter to a frying pan, heat, add the meatballs and fry until golden brown and cooked through, remove and set aside.
  3. To the same pan add the onions and cook until translucent.
  4. Add the sun dried tomatoes, cook, stirring, for 2-3 minutes.
  5. Add chicken broth, simmer to reduce slightly.
  6. Add heavy cream and bring to a gentle simmer, season with salt and pepper to taste.
  7. Add the baby spinach, allow to wilt, stir in the parmesan cheese and allow to melt.
  8. Add the meatballs back to the pan, spoon the sauce over top and allow to heat through.
