Crab and Lobster Soup

Ingredients

Units Scale
  • 3 tbsp butter
  • 1/2 finely chopped red onions
  • 2 cups corn niblets
  • 3 tbsp flour
  • 2 cups milk
  • 2 cups cream
  • 1 tbsp chopped dill
  • 1 tsp dijon mustard
  • 2 tsp Hot Under The Kilt Acadian Cajun seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp port
  • 1/2 lb crab meat
  • 1/2 lb lobster meat
  • Squeeze of fresh lemon juice

Instructions

  1. Melt the butter in a heavy bottom pot.
  2. Add the onions, corn and flour and cook for 2-3 minutes, stirring continuously.
  3. Add the milk and cream and warm through.
  4. Stir in the mustard, the dill, the H.U.T.K, salt and pepper. Bring to a low boil, reduce to a simmer.
  5. Add the port, the crab and lobster, cook for an additional 7-8 minutes.
  6. Ladle into bowls and finish with a squeeze of fresh lemon juice.
