Cheesy Lobster Poutine
Lobster poutine isn’t necessarily a new concept but most of the time it’s served with Hollandaise sauce which, in our opinion, is just a bit too rich. Instead we’ve used a cheese sauce with a combination of mozzarella, parmesan, provolone and asiago but feel free to use any blend of your choosing or just a single type of cheese works as well.

- 2 tbsp butter
- 1 medium shallot, diced
- 2 tbsp flour
- 1/2 tsp mustard
- 1/4 cup white wine
- 1 cup whole milk
- 1/2 cup Velveeta cheese
- 1 1/2 cup mixed cheese
- 3 green onions ( reserve 1 for garnish)
- 2 tbsp butter
- 1/2 lb chopped lobster meat
- Cooked French fries
Instructions
- Melt 2 tbsp butter in a sauté pan, add the shallot and cook until it begins to soften.
- Add the flour and cook for 2-3 minutes.
- Add the mustard and white wine, stir.
- Add the whole milk and cook until the sauce begins to thicken. stir in the green onion.
- Meanwhile in a second pan melt the remaining 2 tbsp of butter and sauté the lobster until warmed through.
- Place the French fries on a plate, top with the lobster meat and pour the cheese sauce over top.
- garnish with green onions and serve.
