Buttery Seasoned Cheese, Dill and Maple Potatoes Hash With Sour Cream & Chive

Serves 4

  • 4 tbsp butter divided
  • 6 to 8 potatoes, skin on, thinly sliced
  • 1 small onion, finely chopped
  • 1 pk Pop “N” Top white cheddar
  • 1 pk Pop “N” Top dill

 

In a good-size frying pan, preferably cast-iron, melt 2 tbsp of butter; add potatoes, onions and Pop “N” Top seasoning. Be patient and allow potatoes to brown and crisp a bit before turning. Once turned, add the second 2 tbsp. of butter repeat the process, make sure that all the potatoes are golden brown. This will take 15 to 20 minutes, once the potatoes are cooked scramble the eggs and cream, add the pepper, and pour on top of the potatoes, let the eggs cook on the bottom, then flip. Serve with a dollop of the Chive Sour Cream. (recipe below)

 

Pop “N” Top Chive Sour Cream

  • 1 cup restaurant style sour cream
  • 1 pk Pop “N” Top sour cream and chive
  • 1 oz of wabanaki maple
  • Pepper to taste

 

Mix well in a small bowl and serve.
