Beef Taquitos
These beef taquitos make a quick snack or a light dinner when paired with a salad. We chose to make them in the air fryer but they can also be baked in a 400* oven or deep fried in oil that’s been preheated to 350*.

1 tbsp olive oil
- 1 lb ground beef
- 1/2 jalapeno pepper, diced
- 2 tbsp red onions, finely minced
- 1/4 tsp chili flakes
- 1/4 tsp chili powder
- 1/4 tsp paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp oregano
- 1/4 tsp cumin
- 1/4 water
- 1 cup shredded mozzarella
- 12 corn tortillas
- 3 tbsp molasses
- 3 tbsp balsamic vinegar
- 1 tbsp olive oil
Instructions
- Preheat air fryer to 400
- Heat olive oil in a sauté pan. Add the ground beef, jalapenos, and red onion, mince and cook until no longer pink.
- Add the seasonings and the water, mix well, cook until the mixture begins to thicken.
- Meanwhile combine the molasses, balsamic vinegar and water, mix well.
- Place cheese on a corn tortilla, add the meat mixture and a drizzle of sauce, roll and secure with a toothpick.
- Air fry for 6-8 minutes.
