Beef Taquitos

These beef taquitos make a quick snack or a light dinner when paired with a salad. We chose to make them in the air fryer but they can also be baked in a 400* oven or deep fried in oil that’s been preheated to 350*.

Ingredients

1 tbsp olive oil

  • 1 lb ground beef
  • 1/2 jalapeno pepper, diced
  • 2 tbsp red onions, finely minced
  • 1/4 tsp chili flakes
  • 1/4 tsp chili powder
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp oregano
  • 1/4 tsp cumin
  • 1/4 water
  • 1 cup shredded mozzarella
  • 12 corn tortillas
  • 3 tbsp molasses
  • 3 tbsp balsamic vinegar
  • 1 tbsp olive oil

Instructions

  1. Preheat air fryer to 400
  2. Heat olive oil in a sauté pan. Add the ground beef, jalapenos, and red onion, mince and cook until no longer pink.
  3. Add the seasonings and the water, mix well, cook until the mixture begins to thicken.
  4. Meanwhile combine the molasses, balsamic vinegar and water, mix well.
  5. Place cheese on a corn tortilla, add the meat mixture and a drizzle of sauce, roll and secure with a toothpick.
  6. Air fry for 6-8 minutes.
