Ingredients

  • 1/4 cup olive oil
  • 1 clove garlic, sliced
  • 1 lb beef cut into strips
  • 2 medium yellow onions, julienned
  • 1 red pepper, julienned
  • 1 yellow pepper, julienned
  • 1 jalapeno pepper, minced
  • 2 tsp dried cumin
  • 2 tsp dried coriander
  • 6 soft tortilla shells

Instructions

  1. Heat the olive oil in a large skillet.
  2. Add the garlic and cook until it turns golden. Remove the garlic with a slotted spoon and discard.
  3. Season the beef with salt and pepper.
  4. Sear the beef until it is medium rare. remove from the pan and set aside.
  5. Add the onions and peppers, sprinkle with the cumin and coriander. Cook until soft.
  6. Add the beef back into the pan and warm through.
  7. Wrap the tortillas in a damp dish towel and microwave for 1-2 minutes.
  8. To assemble place salsa, sour cream and guacamole on the the tortilla, add the beef mixture, top with the cheese and hot sauce.
  9. Roll the tortilla away from you, tucking in the ends as you go.
