BBQ Turkey Tacos

Ingredients

  • 1 lb turkey breast, cut into thin strips
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/2 cup BBQ sauce (your favorite brand or homemade)
  • 8 small corn or flour tortillas
  • Toppings:
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • 1/2 cup corn salsa or regular salsa
  • 1 avocado, sliced
  • Pickled jalapeños (optional)
  • Lime wedges (optional)

 


Instructions

  1. Preheat your grill to medium-high heat.
  2. Drizzle the turkey breast strips with olive oil and season with salt and pepper.
  3. Grill the Turkey:
  4. Place the turkey strips on the preheated grill.
  5. Grill the turkey for about 3-4 minutes per side, or until fully cooked and slightly charred.
  6. During the last minute of grilling, brush the turkey strips generously with BBQ sauce, allowing it to caramelize on the grill.
  7. Prepare the Tortillas:
  8. While the turkey is grilling, warm the tortillas on the grill for about 30 seconds per side, or until they are warm and have light grill marks.
  9. Assemble the Tacos:
  10. Slice the grilled turkey strips into bite-sized pieces.
  11. Divide the BBQ turkey evenly among the 8 tortillas.
  12. Top each taco with shredded lettuce, diced tomatoes, shredded cheese, chopped fresh cilantro, sour cream, corn salsa or regular salsa, and avocado slices.
  13. Add pickled jalapeños for a spicy kick if desired.
  14. Serve the tacos with lime wedges on the side for an extra burst of flavor, if desired.
