- 1 lb turkey breast, cut into thin strips
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1/2 cup BBQ sauce (your favorite brand or homemade)
- 8 small corn or flour tortillas
- Toppings:
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream
- 1/2 cup corn salsa or regular salsa
- 1 avocado, sliced
- Pickled jalapeños (optional)
- Lime wedges (optional)
Instructions
- Preheat your grill to medium-high heat.
- Drizzle the turkey breast strips with olive oil and season with salt and pepper.
- Grill the Turkey:
- Place the turkey strips on the preheated grill.
- Grill the turkey for about 3-4 minutes per side, or until fully cooked and slightly charred.
- During the last minute of grilling, brush the turkey strips generously with BBQ sauce, allowing it to caramelize on the grill.
- Prepare the Tortillas:
- While the turkey is grilling, warm the tortillas on the grill for about 30 seconds per side, or until they are warm and have light grill marks.
- Assemble the Tacos:
- Slice the grilled turkey strips into bite-sized pieces.
- Divide the BBQ turkey evenly among the 8 tortillas.
- Top each taco with shredded lettuce, diced tomatoes, shredded cheese, chopped fresh cilantro, sour cream, corn salsa or regular salsa, and avocado slices.
- Add pickled jalapeños for a spicy kick if desired.
- Serve the tacos with lime wedges on the side for an extra burst of flavor, if desired.
