BBQ Sausage And Potato Skillet

Ingredients

  • 4 sausages, flavor of your choosing ( we used Oktoberfest and Cheddar)
  • 1/2 red onion, cut in chunks
  • 1 1/2 lbs baby potatoes, parboiled
  • 1 ear of corn cut in 6
  • 8 baby peppers cut in half
  • 2 tbsp olive oil
  • 1 tbsp Acadian Cajun seasoning
  • 12 leaves of basil, chopped
  • 1/4 cup Bert’s BBQ sauce

Instructions

  1. Heat the BBQ to medium high.
  2. In a bowl toss all the vegetables, the Acadian Cajun seasoning and the olive oil. Place into a grill pan, place on the BBQ, close the lid and sauté for 5-6 minutes.
  3. Open the BBQ and cook the sausages while continuing to toss the vegetables. When the sausages are ready to turn add the basil to the vegetables.
  4. Once the sausages are cooked slice on the bias and add to the vegetables, cook for a few more minutes.
  5. Remove from the heat, place in a bowl and add the BBQ sauce.
