Ingredients

  • 1 and 3/4 cup all-purpose flour
  • 1/2 cup white sugar
  • 1 teaspoon cinnamon
  • 1/8 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 teaspoon baking powder
  • 1/2 tsp baking soda
  • 1 cup chocolate chips
  • 1 cup toasted coconut
  • 3 medium over ripe bananas, mashed
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2/3 cups sour cream
  • 2 teaspoons vanilla

 


Instructions

  1. Preheat the oven to 400°
  2. In a large bowl combine the flour, sugar, cinnamon nutmeg, baking powder, baking soda, and salt. Whisk together and stir in the chocolate chips and toasted coconut.
  3. In a second bowl add the bananas, vegetable oil, eggs, sour cream, and vanilla. Use a hand mixer to combine until smooth.
  4. Add the wet ingredients into the dry and stir until combined.
  5. Place into a well-greased 12 cup muffin tin and place in the oven for 20 minutes.
