Banana Chocolate & Coconut Muffins

- 1 and 3/4 cup all-purpose flour
- 1/2 cup white sugar
- 1 teaspoon cinnamon
- 1/8 tsp ground nutmeg
- 1/2 tsp salt
- 1 teaspoon baking powder
- 1/2 tsp baking soda
- 1 cup chocolate chips
- 1 cup toasted coconut
- 3 medium over ripe bananas, mashed
- 1/2 cup vegetable oil
- 2 large eggs
- 2/3 cups sour cream
- 2 teaspoons vanilla
Instructions
- Preheat the oven to 400°
- In a large bowl combine the flour, sugar, cinnamon nutmeg, baking powder, baking soda, and salt. Whisk together and stir in the chocolate chips and toasted coconut.
- In a second bowl add the bananas, vegetable oil, eggs, sour cream, and vanilla. Use a hand mixer to combine until smooth.
- Add the wet ingredients into the dry and stir until combined.
- Place into a well-greased 12 cup muffin tin and place in the oven for 20 minutes.
