Avocado and Edamame Toast with Chili Oil, Microgreens, and Everything Bagel Spice

Avocado toast has earned its place as a staple, but it’s also become predictable. This version breaks out of that rut by introducing real texture, balanced flavors, and a more satisfying bite. The avocado-edamame combo offers more than just creaminess — it brings a subtle nuttiness and a protein boost that makes this toast feel like a complete meal rather than a snack.

The chili oil isn’t just there for heat. It adds depth and complexity, cutting through the richness of the mash without overwhelming it. Depending on how much you use, it can stay in the background or take center stage. Either way, it brings balance to the dish and a nice finish that lingers without overpowering.

Everything bagel seasoning adds contrast. It’s not just for garnish — the sesame seeds, garlic, onion, and salt give this toast an extra layer of flavor and texture that plays well with the soft avocado base. It turns what could be a one-note spread into something layered and satisfying.

Then come the microgreens. These aren’t decoration — they bring freshness and a slightly peppery bite that lifts the whole thing. Especially if you’re using radish, mustard, or arugula varieties, they help reset your palate between bites and make each one feel clean.

Avocado Edamame Toast

Ingredients

Units Scale

Base

2 thick slices sourdough bread (about 1” thick)
Olive oil or butter (for toasting)

1 small garlic clove, finely grated or mashed

Avocado-Edamame Smash

1 ripe avocado
1/3 cup shelled edamame (steamed or thawed if frozen)
Juice of 1/2 lime
1 tsp sesame oil
Salt and black pepper, to taste

Toppings

12 tbsp chili oil (store-bought or homemade, go by your heat tolerance)
12 tbsp everything bagel seasoning
1/2 cup mixed microgreens (radish, arugula, mustard, etc.)
Optional: flaky salt, extra lime wedges


Instructions

  1.  Toast the sourdough. Drizzle or brush slices with olive oil or butter. Rub with the garlic.
  2. Toast in a skillet or under a broiler until golden and crisp on both sides — don’t wimp out; you want crunch to stand up to the smash.
  3. Make the avocado-edamame smash. In a bowl, mash the avocado and edamame together. Keep some texture — don’t puree it smooth.
  4. Stir in lime juice, sesame oil, salt, and pepper. Taste and adjust seasoning.
  5. Assemble
  6. Spread the avocado-edamame mix thickly over the toasted sourdough.
  7. Drizzle with chili oil — let it pool and streak across the top.
  8. Sprinkle generously with everything bagel spice.
  9. Top with a good handful of microgreens per slice.
        1. Optional: Hit it with flaky salt and an extra squeeze of lime if you want more pop.

Notes

  1. Want protein? Top with a jammy egg or sliced soft-boiled egg.
  2. No chili oil? Sub with chili crisp, or make a quick one with hot oil poured over chili flakes + sesame seeds + garlic.
  3. Want it to hit harder? Add pickled onions or crushed roasted peanuts.
